I've been struggling with having so many holidays so close together! It kills me that on the same night we ate this: Our oh-so-Irish traditional dinner of fried potatoes and hot dogs. I asked my mom about this tradition and she basically told me to focus on the potatoes. Happy St. Pat's!

I too am a little flustered with the closeness of Easter and St. Pat's. I don't like Easter in march! It's tough. But you were a great mama and fit it all in! Looks fun.
